Healthy Kids Muffins

 Muffins


Ingredients :

  1. Eggs - 2
  2. All Purpose Flour - 3/4 cup
  3. Wheat Flour - 1 cup
  4. Sugar - 1 n 1/4 cup
  5. Butter - 1/2 cup
  6. Sour Cream - 1 cup 
  7. Baking Powder - 1 tsp
  8. Baking Soda - 1/2 tsp
  9. Vanilla essence - 1 tsp
  10. Cinnamon powder - 1/4 tsp
  11. Salt - 1/2 tsp
  12. Blueberries - 1 cup 

Procedure :

  1. Beat Eggs (at room temperature), powder sugar, salt until the mixture is white n well beaten 
  2. Mix all purpose and wheat flour  and sift it in the egg mixture
  3. Add molten butter, baking powder, baking soda, vanilla essence, cinnamon powder , sour cream and beat well for a couple of minutes. 
  4. Do not overmix. 
  5. Take 1 cup frozen blueberries and apply all purpose flour(1-2 tsps) to all the blueberries and gently  fold them in the cake batter. Rubbing flour will prevent them from sinking to the bottom of the pan. 
  6. Fill muffin pan with cake batter and sprinkle sugar on top .
  7. Bake at 300 F for 25-30 mins, checking intermittently


Modifications: 
  1. Use banana pulp, chopped nuts , other berries in the muffins 
  2. Use 1/4 cup almond flour and 3/4 cup wheat flour - cake might turn out a little dense
