Healthy Kids Muffins
Muffins
Ingredients :
- Eggs - 2
- All Purpose Flour - 3/4 cup
- Wheat Flour - 1 cup
- Sugar - 1 n 1/4 cup
- Butter - 1/2 cup
- Sour Cream - 1 cup
- Baking Powder - 1 tsp
- Baking Soda - 1/2 tsp
- Vanilla essence - 1 tsp
- Cinnamon powder - 1/4 tsp
- Salt - 1/2 tsp
- Blueberries - 1 cup
Procedure :
- Beat Eggs (at room temperature), powder sugar, salt until the mixture is white n well beaten
- Mix all purpose and wheat flour and sift it in the egg mixture
- Add molten butter, baking powder, baking soda, vanilla essence, cinnamon powder , sour cream and beat well for a couple of minutes.
- Do not overmix.
- Take 1 cup frozen blueberries and apply all purpose flour(1-2 tsps) to all the blueberries and gently fold them in the cake batter. Rubbing flour will prevent them from sinking to the bottom of the pan.
- Fill muffin pan with cake batter and sprinkle sugar on top .
- Bake at 300 F for 25-30 mins, checking intermittently
Modifications:
- Use banana pulp, chopped nuts , other berries in the muffins
- Use 1/4 cup almond flour and 3/4 cup wheat flour - cake might turn out a little dense
